The great thing about the spinach pancake batter is that even if your little one is going through a fussy or picky stage, and doesn’t want any toppings – there is spinach right inside the batter, so your little one is still getting their helping of vegetables without a battle.

Ingredients

This toddler friendly spinach pancake recipe is made with fresh ingredients, vegetables and lots of goodness to make a healthy and delicious breakfast or lunch recipe.

Spinach pancake batter ingredients

  • 150g plain flour
  • 2 eggs
  • 250ml milk
  • 1 tbsp rapeseed oil (or vegetable oil)
  • 50g spinach

Mushroom filling ingredients

  • 2 tbsp fresh chopped tarragon
  • 2 tbsp fresh chopped parsley
  • ½ small onion
  • 1 garlic clove
  • 500g mixed mushrooms
  • Rapeseed oil (or vegetable oil)
  • 1 tsp dry thyme
  • Juice of 1/2 lemon

Ricotta topping ingredients

  • 250g ricotta
  • 1 lemon (zest and 1/2 juice)

Making the spinach pancake batter

Add the flour to your bowl with the eggs. Whisk this together with the milk and oil until your batter is fluid.

Blend the batter with the spinach, using a blender and whizz until smooth. Then leave to rest for 30 mins.

While your batter is resting, prepare the rest of your ingredients.

Chop the tarragon and parsley. Dice the onion and crush the garlic. Chop the mushrooms. Zest the lemon and set all of the chopped ingredients aside.

You are ready to cook the mushroom filling.

Mushroom Filling for Savory Pancakes

In a large frying pan, heat some vegetable oil. Add chopped onion and fry under medium heat until soft.

Add garlic, mushrooms and herbs to the frying pan. Cook for 10-15mins under medium heat until soft, stirring often so that your mushrooms do not stick to the bottom of the pan.

When these are done, remove from the heat and stir in 1/2 the lemon juice. Keep the mushrooms in a warm oven until you need them later.

Ricotta Topping for Pancakes

Mix the ricotta with the lemon zest and the rest of the lemon juice, in a small bowl.

Cooking the Spinach Pancakes

Heat a medium frying pan or crêpe pan over a medium to high heat and wipe it with some greased kitchen paper.

Add a ladle of spinach batter mix to the pan and spread evenly.

When the pancake is ready to flip, flip it and cook it on the other side.

Set aside each pancake in a warm oven to keep warm while you cook the rest.

Use half a ladle of spinach batter mix per pancake to make toddler size pancakes.

Repeat until the batter mix is finished. Build your own pancakes by topping them with the cooked mushroom mixture and a spoonful of ricotta on the side.

  4. In a large frying pan, heat some vegetable oil. Add chopped onion and fry under medium heat until soft. Add garlic, mushrooms and herbs to the frying pan.
  5. Cook for 10-15mins under medium heat until soft. Stir often so that the mushrooms do not stick to the bottom of the pan. When done, remove from heat, stir in 1/2 the lemon juice and keep mushrooms in a warm oven.
  6. (Optional for ricotta topping) In a small bowl, mix ricotta with the lemon zest and the rest of the lemon juice.
  7. Heat a medium crêpe/frying pan over medium to high heat. Wipe it with some greased kitchen paper. Add a ladle of spinach batter mix to the pan and spread evenly. When pancake is ready to flip, cook it on the other side. Set aside in a warm oven while you cook the rest. Use half a ladle of spinach batter mix to make toddler size pancakes
  8. Repeat until the batter mix is finished. Build your own pancakes by filling them with mushrooms and a dollop of ricotta on the side, if preferred.
