You might be surprised to think about sneaking vegetables right into a chocolate cake, but these chocolate avocado cupcakes with avocado buttercream frosting give you a great way to do that! This is a simple way to make a boxed cake mix a little healthier which is always a good thing.
Ingredients for your Chocolate avocado cupcakes
- Boxed chocolate cake mix and the ingredients it calls for, minus the oil
- 1/3 cup of mashed ripe avocado to replace the 1/3 cup of oil. You can easily mash your avocado with a fork.

Follow the directions on your box of cake mix, omitting the oil and replacing it with an equal amount of mashed avocado.
Reduce the given baking time by 5 minutes.
Your cupcakes are done when a toothpick inserted in center comes out clean.
How to make the Avocado Frosting
- 5 Cups powdered sugar
- 1 Stick of butter, softened
- 1 Ripe avocado, mashed
- 3 tbs milk
Next, slowly add your powdered sugar.
Add milk to get the consistency that you desire.
This will give you a light green-ish avocado colour frosting as you can see in the pictures. It’s great for St Patrick’s day but works well all year round too.
