Jammy Dodgers Recipe

Jammy Dodgers are the best biscuits (cookies) – easily beating chocolate biscuits if you ask me. They’re a classic that has stood the test of time, and are equally as great at kids parties as they are as a treat with your coffee.

If you want to take them a step up from the shop bought version, try making your own with this recipe.

Jammy dodgers recipe. How to make home made jammy dodger biscuits

Serves: 2 – 4

Preparation & cooking time: prep: 60 mins/cooking: 7 mins

Difficulty: medium

Home Made Jammy Dodger Ingredients:

60g Two Chicks Liquid Whole Egg

Assorted favourite jams

100g | 3.5 oz | ½ cup unsalted butter

175g | 6 oz | ¾ cup caster sugar

200g | 7 oz | 1 cups plain flour

Jammy Dodger Method:

Cream together butter and sugar.

Add the eggs a little at a time until it is blended into the mixture.

Mix in the flour and bring mixture together to form a ball. Put ball in fridge for 30 minutes.

Meanwhile pre-heat oven to 190°c (170° fan) | 375F | gas mark 5 and grease and line two baking sheets.

Roll out the biscuit mix on to a floured board. Using biscuit cutters cut the biscuits out, making sure that every one has the same shaped top. Cut a small hole out of the top of the biscuits. Bake for 7 minutes.

When the biscuits are cool, spread the bottom layer with jam (cherry, strawberry or raspberry work well) and sandwich together.
