As every parent knows, there are some days when you just really need a quick and easy tea. The kids may be tired after a long day back at school, and want something comforting and easy to eat, or you may be rushing around with not much time to spare between school runs and taking the kids out to after school activities.

Bird’s Eye have offered a solution with some great easy recipes for kids that they’ve allowed me to share here with all of you. With these simple ideas you can make the kids favourite frozen foods into something a bit more special and exciting!

Here’s how to make Waffle Nachos:

Quick and easy recipe - great for busy days after school. Potato Waffle Nachos

Waffle Nachos Recipe

  • Pre-heat the oven and cook Birds Eye Mini Waffles as per the pack instructions – 4 per person
  • Heat baked beans, as directed
  • Place shredded lettuce on the plate, and top with mini waffles, beans and salsa
  • Sprinkle a little grated cheese on top
  • Place under the grill until the cheese is nicely melted.

So easy and so tasty! It doesn’t have to be only for the kids, I have to admit I love these waffles too. When I was pregnant with all of the kids I used to crave potato waffles so bad – they are the ultimate comfort food for me!

This recipe uses Birds Eye mini potato waffles, a bite sized version of the classic tea time favourite. They are made with real potatoes and are gluten free. RRP 1.99 for a 456g pack and available from most supermarkets including Tesco, Asda, Sainsburys, Morrisons and Waitrose.
