With Autumn around the corner, these Pumpkin muffins are a fun and tasty treat for all the family. Disney fans will love eating their own enchanted pumpkin, just like Cinderella’s carriage! These would be great for a fun fairytale themed party, whether for Halloween or kids birthdays.
Ingredients
14oz Organic Wholewheat Flour
8oz Pumpkin Puree
3oz Cup melted coconut oil
4oz Maple Syrup
2 Organic Eggs
1/4 Cup Organic Almond Milk
1 Tsp Bourbon Vanilla
1 Tsp Baking Soda
1/2 Tsp Sea Salt
1/2 Tsp Ginger
1/2 Tsp Cinnamon
1/4 Tsp All Spice
1/4 Tsp Nutmeg
Method
Preheat oven to 375 F / 190C / Gas Mark 5
In a large bowl, combine the pumpkin puree, eggs, milk, coconut oil, and maple syrup and beat together
Add vanilla, baking soda, salt, cinnamon, ginger, allspice, and nutmeg and mix thoroughly
Add your flour and mix all together until evenly combined
Portion your batter out into 10-12 muffin cups
Bake muffins for 25 minutes or until fully cooked
Remove from oven and let them cool.
For the Fondant
Ingredients:
3 1/2 cups organic powdered sugar
1/3 cup light corn syrup
1/3 cup organic butter (soft)
1/2 tsp salt
Method:
Mix corn syrup, butter and salt in a large mixing bowl
Mix in powdered sugar with a soft spatula
Knead the mixture together until smooth
