We love Big Hero 6. It’s definitely one of our favourite Disney movies. We’ve seen it in the cinema twice, and will be looking forward to getting it on DVD once it’s released. Honey Lemon is one of my favourite characters in Big Hero 6. She is extremely sweet and kind, and balances both sides of being feminine and girly yet at the same time just as great a scientist as any of the other members of Big Hero 6. She is not a damsel in distress but a really strong female character from Disney, which is great.
If you’re having a Big Hero 6 themed party, or want to try out some Big Hero 6 treats then take a look at this Honey Lemon themed cupcake recipe that ties in with this character and can also be decorated with Baymax’s face for an unmistakable “Big Hero 6” look.
Honey Lemon’s Honey Bee Cupcakes Ingredients
Cupcakes
- 1 Box lemon cake mix
Lemon Curd
- 1 teaspoon powdered gelatin
- 1 table cold water
- 3/4 cup lemon juice
- 3/4 cup sugar, divided
- 3 large eggs
- 3 large egg yolks
- 1 tablespoon unsalted butter
Honey Lemon Frosting
- 3/4 cups lemon curd – use recipe above, or if short on time you can buy ready made (UK / US)
- 1 teaspoon honey
- 1 cup heavy cream
Chocolate Bumble Bees
- 32 Hershey’s Kisses dark chocolate chips
- 1 small tube black writing icing
Honey Lemon’s Honey Bee Cupcakes Method
For cupcakes
Prepare cake mix cupcakes according to package directions, filling muffin cups 3/4 full with batter.
Remove 8 cupcakes and keep aside for another use and set 16 aside to cool down completely.
To make the lemon curd
Sprinkle gelatin over cold water in a small bowl, and set aside
Combine lemon juice and 1/2 cup sugar in a small saucepan over a medium / low heat and bring to a simmer.
Whisk together remaining 3/4 cup sugar, eggs and egg yolks in a medium bowl
Pour 1/4 of simmering lemon sugar mixture into egg mixture, whisking so that eggs do not cook
Pour contents of the bowl back into the pan with the remaining lemon mixture
Continue cooking, stirring constantly for 2 minutes until the mixture thickens
Remove from heat and add gelatin mixture and butter, whisking well
Strain through a fine mesh sieve into a bowl.
For the honey lemon frosting
Stir honey into one bowl of lemon curd
Beat heavy cream on high speed with an electric mixture until peaks start to form.
Gently fold in honey lemon curd
Refrigerate for 2 hours
To assemble the Honey Lemon Cupcakes
Scoop out a portion of each cupcake using a teaspoon
Place lemon curd in a large ziplock bag and cut a small hole in the end
Pipe approximately two teaspoons of lemon curd into the centre of each cupcake
Place honey lemon frosting into a separate zip lock bag and cut a medium sized hole in the end.
Pipe honey lemon frosting on top of each cupcake.
To add Baymax’s face to the cupcakes
If you want to add Baymax’s face as a feature on top of your Honey Lemon cupcakes:
Place two Hershey’s Kisses (facing top down) on top of each cake for Baymax’s eyes.
Using black writing icing, pipe a horizontal line in between the kisses to complete Baymax’s face
Refrigerate until ready to serve.
