In the lead up to Mother’s Day, Dr. Oetker wants to encourage children to bake with their dad, grandma or auntie and create a special surprise gift for mum. To help out, they have created a fun and engaging children’s Mother’s Day-themed recipe book with Ian Cumming, ex GBBO finalist, featuring editor’s intro, four simple recipes and food and baking related jokes.

This is a lovely book, which children will really enjoy using. I know my kids feel a lot of pride and happiness when they make something themselves and present it to me as a special gift on Mother’s Day!

Blossoming Cupcakes

This simple baking recipe is one of my favourite examples from the special Dr. Oetker Mother’s Day baking book. It makes 12 cupcakes, and takes 15 minutes to prepare, then 20 minutes to cook.

The flower design is so effective, and is something even very young children could help out with to put together a lovely baked treat for their mum.

Ingredients:

  • Dr. Oetker cupcake cases
  • 125g unsalted butter
  • 125g caster sugar
  • Pinch of salt
  • 2 Large eggs
  • 1 tsp Dr. Oetker Madagascan Vanilla Extract
  • 100g Self Raising Flour
  • 75g Ground Almonds
  • 75ml Milk
  • 2tsp Raspberry or Apricot Jam
  • Dr. Oetker Regal-Ice Ready to Roll Icing, Coloured
  • Dr. Oetker Chocolatey Strands

Method

  1. Pre-heat your oven to 180 degrees C. Mix the butter, a pinch of salt and sugar with a mixer until light and fluffy
  2. Beat in the eggs, one at a time, and add Vanilla Extract. Gently fold in the flour and ground almonds, add the milk and fill 12 cupcake cases with the finished mixture
  3. Bake in the oven for 15 – 20 mins and leave until they are cool. Warm the jam in the microwave for 10-20 seconds and then spread a thin layer on top of the cupcakes
  4. Roll your icing to the thickness of a 1 pound coin. Use 100g of yellow and 100g of red, plus 40g of black icing. Use a cutter to make icing disks (5 yellow, 5 red, and 2 black) and arrange them on top of the cupcakes.
  5. Wipe black cupcakes with a damp cloth and sprinkle chocolatey strands on top. Arrange your cupcakes with a black on in the middle, surrounded by 5 coloured ones. (Repeat this to make a 2nd flower)
  6. Roll most of the green icing, creating stalks for the flowers. Then roll out the remaining icing to create leaves, arranging them on either side of your stalk.
