How have you enjoyed your pancakes this pancake day? As it fell within half term this year, especially with the kids at home during lockdown this year, it is a great excuse to make a fun themed day for the kids and add some variety into our week by celebrating Pancake day.

Pancakes are one of the easiest recipes to make with kids, needing only a few basic ingredients that you likely already have in the kitchen cupboards. That doesn’t mean that you can’t mix it up and make some really cool and unique pancake designs to surprise the kids.

If you’re looking for a really unique and colourful way to enjoy your pancakes, what about making some of these rainbow coloured unicorn inspired pancakes.

They are sure to be a hit with the whole family, especially if your children love unicorns like my little girl does (and let’s face it.. so do I)

Unicorn Rainbow Pancakes Recipe

Here’s the easy recipe for your delicious Unicorn rainbow pancakes, below:

For the Batter:

You will need the following ingredients:

135 g plain flour

1 tsp baking powder

½ tsp salt

2 tbsp caster sugar

130ml milk

1 egg

2 tbsp melted butter (allowed to cool slightly)

Food colouring (green, yellow, purple, blue, pink)

For your decorations:

You could choose from the following ingredients, or improvise with any more decorations you have in the cupboards

Dairy spray cream

Candyfloss

Sprinkles
