The delivery arrived in the early morning, before the school run, so that should work even for those who are working and out of the house during the day and everything was well packaged. All of the ingredients provided are of a good quality, and I was really happy with the box over all.

Today I’m going to share with you the sweet potato quesadillas with black beans and spicy salsa, which was my favourite meal in the Marley Spoon box that we tried. How to make the Sweet Potato Quesadillas

Prepare your vegetables : peel the sweet potato and chop into small pieces. Chop your garlic and set aside. Drain and rinse the beans then place them into a large bowl with your grated cheddar cheese, spices, half your tomato paste, and grated lime zest.

Next, place a large frying pan over medium heat with 2 tbsp of oil. Add the sweet potato and cook for 6 minutes, add the chopped garlic and continue cooking for 2-4 minutes until golden. Then fold this into the bean mixture.

Take 3 tortillas and place 1/3 of the bean mixture onto each one, then cover each one with another tortilla and press them together. Toast each one over a large dry frying pan on medium heat, until golden.

How to make the Salsa

Wash and quarter the onion. Peel garlic. Wash jalapeno and tomatoes.

Add onion, 3/4 of your tomatoes and 1/2 of the garlic to a roasting tray. Add jalapeno according to preference.

Place it on the oven (preheated to high temp / grill) for 8 mins, turning half way.

Get ready to blend the salsa.

Wash the coriander.

Remove the tray of veg from the oven, and remove the stalk from the jalapeno.

Blitz all of the cooked veg along with the juice of half the lime, and the coriander, into a fine paste.

Season with salt and pepper and set aside for later.

The salsa was really tasty! Normally if making quesadillas, I would probably look for a shop bought salsa to save time, so I really liked how Marley Spoon gave the ingredients and recipe for this as well as the quesadillas, to make it a more complete meal.

How to make the salad

Wash your salad, and add chopped tomatoes along with 2 tbsp oil, salt, pepper and your remaining lime juice.

Place some creme fraiche into a separate bowl to serve with the quesadillas, alongside the salsa.
