Sweet Potato Sag Aloo with Gousto

This Sweet Potato Sag Aloo made a really tasty week night meal. It’s healthy and filling, and a great vegetarian option. I love vegetarian food but with a husband who is a huge meat lover, it’s not always easy to keep him happy with vegetarian choices but this sweet potato dish went down well.

I made this dish with our Gousto delivery box. If you’ve not heard of Gousto, it is a really convenient way to prepare home cooked meals for when you’re in a rush, or haven’t been able to plan – or when you just fancy trying out something a bit different. You receive all the ingredients needed for a set menu of meals, in just the right quantities, and you receive clear recipes cards along with that to make it a fool proof way to prepare those meals.

Here’s an example of one of the dishes we tried, the Sweet Potato Aloo saag

Ingredients for Sweet Potato Aloo Saag

  • 400g Sweet Potato
  • 150g Spring Greens
  • 75g Basmati rice
  • 1 tin chopped tomatos
  • 1 green chilli
  • 30g cashew nuts
  • 2 tsp cumin seeds
  • 1 tbsp ground tumeric
  • 2 tsp ground coriander
  • 2 garlic cloves
  • 1 vegetable stock cube

IMG_5584As I mentioned, you get everything in your Gousto box in just the right quantities – so there is no digging around for an ingredient that you forgot to add to your supermarket list.  I will admit, I am really bad meal planner so we often end up having similar things each week, or getting stuck in a rut with our meals. I am also quite bad for forgetting ingredients at the shops and then having to substitute or miss things out so I really appreciated how everything with Gousto is so organised.

With the Gousto box, we got everything we needed for three meals. The dates are marked on the ingredients so that you can see which meal is better for earlier in the week, and which will be good to cook later in the week – but all of them have a couple of days lee-way, in case you miss a night and are not able to cook then your produce will not go bad.

You can choose to have your box for either 2 people or 4 people, but if some of those 4 people are children then you can feed 5 or 6 on a 4 person box.

Having the Gousto box made cooking so effortless, as I didn’t have to think about anything or plan. I’m sure many mums can relate to feeling tired by the end of the day, so not having to think about what to cook but just having everything right there in front of you is really awesome. I enjoyed trying out the new recipes, and each one tasted great.

I will take you through the steps of the Sweet potato sag aloo:

Method: Sweet Potato Sag Aloo

Dice your sweet potato, with the skin still on.

Heat your oil, throw in your spices and toast them for 1 min before tossing in the sweet potato to cook.

IMG_5597Slice and crush your garlic and chilli and add it in, then stir.

Add your chopped tomatoes, along with the stock cube and boiling water.

Stir to combine it all, bring to a boil and then reduce to a low simmer.

IMG_5601Cover with a lid, checking and stirring occasionally.

Meanwhile, make your rice. (I have to admit, I ignored our Gousto instructions and just made our rice in the rice cooker)

When your sweet potato dish is nearly cooked, rip up the leaves from your spring greens and chop them. Add them to the pot and cook for 7-9 mins.

Crush your cashews using a rolling pin and sprinkle them on top to serve.

And you’re done!
