You might be surprised to think about sneaking vegetables right into a chocolate cake, but these chocolate avocado cupcakes with avocado buttercream frosting give you a great way to do that! This is a simple way to make a boxed cake mix a little healthier which is always a good thing.
Ingredients for your Chocolate avocado cupcakes
- Boxed chocolate cake mix and the ingredients it calls for, minus the oil
- 1/3 cup of mashed ripe avocado to replace the 1/3 cup of oil. You can easily mash your avocado with a fork.
Directions: How to make chocolate avocado cupcakes
Follow the directions on your box of cake mix, omitting the oil and replacing it with an equal amount of mashed avocado.
Reduce the given baking time by 5 minutes.
Your cupcakes are done when a toothpick inserted in center comes out clean.
How to make the Avocado Frosting
Ingredients:
- 5 Cups powdered sugar
- 1 Stick of butter, softened
- 1 Ripe avocado, mashed
- 3 tbs milk
Using a stand or electric mixer, combine the butter and avocado until it is all combined and smooth.
Next, slowly add your powdered sugar.
Add milk to get the consistency that you desire.
This will give you a light green-ish avocado colour frosting as you can see in the pictures. It’s great for St Patrick’s day but works well all year round too. Wouldn’t these green avocado cupcakes work great as party cakes for a kids superhero party as Hulk cakes? They would love to know that the added avocado will make them stronger like Hulk!
