As the nights are starting to draw in and the weather is getting colder, sometimes comfort food is just what you need. You can’t beat a jacket potato for a super quick, easy and tasty tea and Bannisters Farm have shared a jacket potato boats recipe to make this classic dinner a little more fun and kid-friendly.

Fun jacket potato boat quick recipe for kids - great for after school

All you need to create this yummy and fun dinner is:

  • 1 box of Bannisters’ Farm Littl’uns Small Baked Jacket Potatoes
  • 1 Small can of tuna
  • Mayonnaise
  • 1 small can of sweet corn
  • 1 small bag of Tortilla crisps
  • Cocktail sticks for the sails

How to make the Jacket Potato Boats

  • Simply slice your potatoes into 6 equal wedges (For this, you will need to let your littl’uns defrost overnight in the fridge or microwave until they are soft enough to slice).
  • Place in the oven and cook until crispy and hot.
  • While the wedges are cooking, mix the small can of well drained sweet corn with the small can of well drained tuna and stir.
  • Add the mayonnaise gradually until the consistency is as you like.
  • Spoon onto the crispy potato wedges and skewer with a cocktail stick.
  • Prop up the tortilla crisp to act as a sail and serve.

I find jacket potatoes a really handy thing to have in. With Mr T he is quite a fussy eater but he does love potatoes so it’s really handy to have different potato recipes to fall back on to encourage him to eat different things. It’s not only children who will enjoy the jacket potato recipes, I have to admit I am a big fan of jacket potatoes myself.

We were sent some of the Bannisters Farm Littl’uns small baked jacket potatoes to try out and the size is great for the children. A whole normal jacket potato would be too large for my little guys (age 3-6) but these are much more suitable. It’s really convenient that you can freeze these jacket potatoes, so they are available when you need them.

Using only British potatoes, Bannisters’ Farm Littl’uns are lightly drizzled with olive oil and then baked to give them a deliciously crisp skin and a light fluffy centre. Bannisters’ Farm then immediately freeze them to lock in that traditional taste. The small jackets were named “Littluns” because that is the Yorkshire phrase which Rob Bannister uses for his own four mischievous grandchildren. The product was inspired by the requirements of the next generation of the Bannister family and requests by friends and family for smaller portions for the children.

  2. This is such a cute idea. I’m from the USA, so I actually had to look up “jacket potato” since we don’t have that product here. I was pleased to see it’s the same thing as a baked potato over here, so I can try these with my little ones too. My son loved when we made sweet pepper boats to eat, so I imagine these will be a hit too. (I found you through Creative K Kids Tasty Tuesday)
