Easy Apple Biscuit Recipe

My kids love to bake, and recently we were sent the new Big Baking Book from Ella’s Kitchen (the yellow one.) The book includes lots and lots of easy and child friendly ideas, and we decided to go for an easy biscuit recipe made with apples called “special apple biccies”

To make these you will need:

  • 150g flour
  • 75g unsalted butter
  • 1 eating apple cored and finely grated
  • 1 egg yolk

As you can see from the ingredients these biscuits have absolutely no refined sugar in them at all so they are great even for the youngest kids.

Weighing out the ingredients is Mr Z’s favourite part, and gives lots of opportunities for practical maths (“We’ve added x-amount, how many more grams do we need?” or “We have too much! How much do we need to take out?” )

How to make the biscuit dough

  • Mix the butter and flour until the mixture resembles fine bread crumbs. You can do this in a food processor (the book recommends this) but we don’t have one so we did this by hand which also works fine.
  • Add the apple and egg yolk and combine them into a dough

Once the dough is made, chill it for an hour.

Then it’s time to cut out fun biscuit shapes on a floured surface, which all the boys enjoy.

Once the shapes are ready, bake them in a pre-heated oven at Gas Mark 4 / 180C / 350F for 20-25 minutes until pale golden.

Very easy, tasty, and fun to make!

  6. Ooooh, these look sooooooo nice. I’ll have to make them with my little niece, she loves cooking with me. She’s only two and I’ve got her making pizzas, jambalayas and all sorts. Training her young! I have a bunny cookie cutter that would have these so cute!
